Mary Jane Bourbon Smokehouse in Cape Griradeau, MO is looking for one culinary manager to join our 69 person strong team. We are located on 1107 Broadway. Our ideal candidate is self-driven, ambitious, and engaged.

Responsibilities

CULINARY MANAGER

    *Work with the production team to ensure we do not have to 86 any items. *Be aware and understand the Company Team Member Handbook and uphold all standards. *Manage the agreed food cost targets in line with the waste goals *Be able to undertake regular audits of all areas within the kitchen and storage areas to ensure complete adherence to agreed policies. *Ensure cleaning lists are operational throughout the food production area and line. *Encourage team members to work safely and efficiently. *Ensure all equipment is working safely and compliant with manufacturers guidelines for operation. *Must be able to ensure all new team members receive thorough intro and are given all the help they need to achieve the required standards in their job. *Must be able to equip all members of the culinary team with the necessary skills and knowledge to enable them to do their job. *Must be able to professionally handle workplace issues and execute a plan to solve these issues. *Attend weekly meetings with the management staff with information from the previous week. *Must be able to positively motivate and treat all team members with respect. *Must be able to effectively communicate weekly financial targets to all members of the culinary team as appropriate *Must be able to ensure that company control procedures regarding food production, portion control, and stock management are fully implemented. *Recruit and conduct interviews for dish, line cooks, and prep. *Assist Executive chef in creating and maintaining the menu. *Assist Executive chef in Price and Cost Analysis on all caterings and menu items. *Must be able to maintain financial goals on waste, food costs, and equipment as per industry standard. *Perform line cook shifts in position as a coach and mentor. *Perform expo shifts at Executive chef’s discretion. *Must attend weekly staff meetings with completed administrative assignments. *Must be able to work one weekend a month. *Must be able to schedule assist and completion of daily Who’s Who

Daily:

    *Work line cook shifts *Check quality of all food and prepped items *Control labor and ticket times; Report to Carisa *Keep kitchen, dry storage, and walk-in organized *Hold culinary employees accountable for getting to work on time

Weekly:

    *Who’s Who *Put away and organize truck deliveries *Print documents for line and prep kitchen *Input inventory
